Quail meat is very lean, rich in color, with a delicate game flavor. These Pharoah Quail, superior to the more common Bob White because of their moist mix of white and dark meat, are raised for D’Artagnan in a free-range environment on natural, wholesome grains. Because they are boneless (with a "prop" provided to make sure the cavity doesn’t meld together), they are ideal for stuffing (with D’Artagnan foie gras, for example). To keep them moist, we also recommend marinating and cooking them quickly over high heat on the grill, under the broiler, or in a sauté pan.
